Baby Steps

This morning, I baked banana chocolate chips muffins. This is a family favorite. So I used our recipe but replaced the cup of sugar with half a cup of Truvia Baking Blend. Truvia contains mostly Stavia and some sugar. It's about 75% fewer calories than sugar. The advantage is that your recipes should still work out. Baby steps!
The taste test got the seal of approval from every testers involved, but I didn't expect any other results, free food is always a guaranty of success around them LOL
Here is the recipe:
Banana and Chocolate Chips Muffins (2 dozens)

Rolled Oat               1 Cup (Yummy Stuff)
Flour                        3 3/4 Cups
Sugar                       1 cup
Truvia                      1/2 cup (Not so trivial hey!)
Baking powder        4 tsp
Salt                          1 tsp

Chocolate chips       1 to 1 1/2 Cup (no choice it's in the title)

Eggs                        2 (Beat the sh** out of them)
Oil                          1/2 Cup (I don't recommended 10W40)
Milk                       1 Cup
Mashed Bananas    2 1/2 cups (About 4 medium bananas)
 
  • Warm up the oven to 350 F. / 180 C.
  • In a bowl, hand mix the rolled oats, flour, Trivia, baking powder, chocolate chips and salt
  • In another bowl, hand mix the beaten eggs, oil, milk and the mashed bananas.
  •  Mix the ingredients from the 2 bowls together.
  • In a muffin pan, drop about a full ice cream scoop of batter in each space.
  • Cook for 18 minutes (until brown on top)

    3. This was the white stuff... it was the only one we had. I will probably change it slowly to whole flour (maybe for the time being 3/4 white 1/4 whole until we like it and can have 100 % whole)

    5. I was teasing you that you wrote floor, not flour. But I think you guys missed that, I was joking. Either way, enjoy your goodies.

      PS: But ... now that you bring it up, there are many kinds of wholemeal, as well as non-wheat options. But since your formula calls for wheat flour (which comes in refined or wholemeal), might I suggest the Kind Arthur line. They have organic and non, and they have a 100% (hard white) whole grain white wholemeal flour, that no one has ever been able to tell the difference, when I give it to them.

      It's got way more flavour than that bland bag of refined white, which by law has to have nutrients added back in.

      But don't get me started on flours, I love them, I make them, I used ALLLL kinds.

      Whatever you decide, good on you for all the great work you've done. And again, I was JOKING about the floor. I really wasn't asking white or wholemeal, as I saw by the pictures, that was refined white.

      My wife proof-read my posts and she changed the floor on the text but not on the ingredient... so I BLAME HER hahaha

      I don't know if we have Kind Arthur line around here but I'll be looking for it. I might have to wait when we go back to Florida to get it or I might just find an alternative.

      One thing you didn't know, when I baked the muffins I was thinking about you and your fun with making your own flour (or floor), it was in my mind so when I saw your comment... I was not surprise!

      Strangely I was feeling guilty about using the process white flour but I decide to get the approval on the sugar substitute first and then will be experimenting with better healthier flour.

      Getting healthier is a life time commitment and finding healthier alternative is crucial, thank you Ivy you are really helping me even when you are joking and I missed it.

    7. That was my bad, I should have asked if it was hard word floor, or tile.

      I still use refined white flour for some applications. Since it has no real flavour, it's wide open for playing. I swear, I really wasn't saying anything against white vs. wholemeal.

      I use bananas and chocolate together and they are just heavenly. I dunno why, but it just works.

  2. Medium? Cool beans! And all that jazz. You look great. The transformation is amazing. Thanks for sharing the muffin recipe. This is the way I cook for the family; try to make healthier stuff. They jump up and down and pout and pull tantrums, but I don't care. I'm ruthless like that :)
